Instructions
Prepare the Fries: Cook french fries according to package directions until extra crispy. If using fresh potatoes, cut into fries, toss with oil and salt, and bake at 425°F (220°C) for 25-30 minutes until golden and crisp.
Make BBQ Chicken: While fries are cooking, heat olive oil in a skillet over medium heat. Add shredded chicken, smoked paprika, garlic powder, onion powder, salt, and pepper. Cook for 2-3 minutes until warmed through and spices are fragrant.
Combine with Sauce: Add BBQ sauce and chicken broth to the skillet with the chicken. Stir to combine and simmer for 5-7 minutes until the sauce has thickened slightly and the chicken is well coated.
Assemble the Poutine: Spread the hot, crispy fries in an even layer on a serving platter or individual plates. Scatter cheese curds evenly over the hot fries so they begin to melt slightly.
Add Chicken and Garnish: Spoon the warm BBQ chicken mixture over the fries and cheese curds. Garnish with sliced green onions and fresh cilantro.
Serve Immediately: Serve right away while everything is hot and the cheese is melty. Enjoy with extra BBQ sauce on the side if desired.
Notes
🔹 Cheese Curds are Key: Fresh cheese curds are essential for authentic poutine texture. If you can't find them, you can substitute with fresh mozzarella torn into small pieces, but the texture won't be quite the same.🔹 Crispy Fries Matter: Don't undercook your fries! They need to be extra crispy to stand up to the sauce without getting soggy too quickly.🔹 Customize Your Sauce: Feel free to use spicy BBQ sauce or add a dash of hot sauce to the chicken mixture if you like heat.🔹 Alternative Cooking Methods: You can use an air fryer for the fries (about 15-20 minutes at 400°F/200°C) for extra crispiness with less oil.🔹 Make it a Meal: This is substantial enough to be a main course, but you can also serve it as a shareable appetizer for game day or parties.
