Ingredients
  

  • 2 cans chickpeas 15 oz each, drained and rinsed
  • 1/2 cup tahini well-stirred
  • 1/4 cup fresh lemon juice about 1-2 large lemons
  • 2-3 cloves garlic minced
  • 1/2 tsp ground cumin
  • 1/2 tsp salt or to taste
  • 1/4 cup ice water plus more as needed
  • 2 tbsp extra-virgin olive oil for serving
  • 1 tsp paprika for garnish
  • 2 tbsp fresh parsley chopped, for garnish

Instructions
 

  • Prepare Chickpeas (Secret Step): For ultra-smooth hummus, peel the chickpeas by rubbing them between towels or your fingers. This removes fibrous skins and creates a creamier texture.
  • Blend Tahini and Lemon: In a food processor, combine tahini and lemon juice. Process for 1 minute until thick and creamy.
  • Add Garlic and Spices: Add minced garlic, cumin, and salt to the processor. Blend for 30 seconds until well combined.
  • Incorporate Chickpeas: Add chickpeas to the mixture. Process for 2-3 minutes until thick but still grainy.
  • Stream in Ice Water: With processor running, slowly add ice water. Blend for 3-4 minutes until smooth and creamy. Add more water if too thick.
  • Taste and Adjust: Stop processor and taste hummus. Adjust salt, lemon, or cumin as needed.
  • Serve and Garnish: Transfer to a bowl, create swirls with a spoon. Drizzle with olive oil and sprinkle with paprika and parsley.
  • Rest for Flavor: Let hummus rest at room temperature for 30 minutes before serving for best flavor.
