Ingredients
  

  • 1 cup all-purpose flour sifted for smooth crepes
  • 1 cup milk whole milk preferred for richer flavor
  • 2 eggs room temperature
  • 2 tbsp unsalted butter melted, plus extra for pan
  • 1 tbsp sugar optional, for sweet crepes
  • 1/4 tsp salt
  • 1 tsp vanilla extract optional, for sweet crepes
  • 1 cup filling of choice such as Nutella, whipped cream, fresh fruits, or ham and cheese for savory rolls

Instructions
 

  • Prepare the Batter: In a mixing bowl, whisk together flour, sugar, and salt. Gradually add eggs and milk, whisking until smooth. Stir in melted butter and vanilla extract. Let batter rest for 10 minutes.
  • Heat the Pan: Heat a non-stick skillet or crepe pan over medium heat. Lightly grease with butter.
  • Cook the Crepes: Pour a small ladle of batter into the pan, tilting to spread evenly. Cook for 1–2 minutes until edges lift, then flip and cook 30–60 seconds more. Repeat with remaining batter.
  • Fill the Crepes: Place your desired filling (sweet or savory) along one side of the crepe. Roll tightly to form a neat crepe roll.
  • Serve: Arrange rolls on a plate. Dust with powdered sugar or drizzle chocolate sauce for sweet crepes, or garnish with herbs for savory versions. Serve immediately or chill for later.
