Ingredients
  

  • 3 ripe bananas peeled and mashed
  • 1 egg room temperature
  • 1 tsp vanilla extract
  • salt pinch
  • 1/2 cup neutral oil avocado oil used
  • 1/2 cup sour cream Greek yogurt can be used instead
  • 1 tsp cinnamon
  • 1/2 cup dark brown sugar light brown sugar can be substituted
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 cup chopped hazelnuts
  • 1/2 cup chocolate chips dark chocolate used
  • 6 tbsp Nutella warmed until runny

Instructions
 

  • Mash the Bananas: Peel the bananas and place them into a large bowl. Remove any stringy bits, then mash thoroughly using a fork, potato masher, or hands until smooth with no large chunks remaining.
  • Add the Egg: Add the room-temperature egg to the mashed bananas and mix well until fully combined. If the egg is cold, place it in warm water for about 10 minutes before using.
  • Mix Wet Ingredients: Stir in vanilla extract, salt, oil, and sour cream. Mix until smooth. The sour cream keeps the bread moist and helps activate the rising agents.
  • Add Cinnamon and Sugar: Add cinnamon to the wet mixture and stir to activate its flavor. Mix in the brown sugar until fully incorporated.
  • Add Dry Ingredients: Add the flour, baking soda, and baking powder directly on top of the wet ingredients. Lightly stir on the surface, then gently mix everything together until combined with no large flour pockets.
  • Fold in Mix-ins: Add the chopped hazelnuts and chocolate chips. Fold gently to distribute evenly throughout the batter.
  • Prepare Nutella: Measure the Nutella into a microwave-safe bowl and warm for about 30 seconds until runny. Do not heat in the original jar.
  • Layer the Batter: Add a portion of batter into each loaf tin. Drizzle Nutella over the batter and gently swirl. Top with remaining batter, smooth the surface, then drizzle remaining Nutella and swirl again.
  • Air Fry: Preheat the air fryer to 175°C (350°F) using the bake setting. Bake one loaf at a time if needed. One-pound loaves bake for about 25–30 minutes, while a larger loaf takes 45–55 minutes.
  • Check Doneness: The bread is done when the internal temperature reaches about 88°C (190°F) and the center is fully set.
  • Cool and Slice: Let the bread cool in the tin for about 10 minutes. Run a knife around the edges, remove, and allow to cool completely before slicing.

Notes

🔹 Greek yogurt can be used instead of sour cream.
🔹 Nutella should be warmed separately, never in the jar.
🔹 Recipe can be baked as two 1-lb loaves or one 2-lb loaf depending on air fryer size.
🔹 Baking time increases if using a conventional oven.
