Two Ingredient Japanese Cheesecake (Viral TikTok Recipe)

Today Iโ€™m making the viral two ingredient Japanese cheesecake. I know, everything on TikTok gets called viral, but every now and then something really is worth trying โ€” and this is one of those recipes.

I just got back from Japan, so Iโ€™m fully on board with testing anything Japanese-inspired. This version is everywhere right now, and the idea is simple: a cheesecake-style dessert using Greek yogurt and Biscoff cookies.

The original recipe uses plain Greek yogurt and Biscoff cookies. I didnโ€™t go fully plain. Iโ€™ve seen people make this a few different ways, so I decided to put a small spin on it while still keeping the base idea the same.

The whole point of using Greek yogurt here is to create a healthier alternative to traditional cheesecake. I love cheesecake โ€” especially a classic New York style โ€” but this is meant to be lighter while still hitting those familiar flavors.

Layering the Cheesecake

The process is surprisingly simple. The cookies are placed directly into the yogurt, one by one. It looks a little strange at first, but once you start layering them in, it actually starts to look really good.

The cookies soften as they sit, absorbing moisture from the yogurt. Thatโ€™s where the magic happens. What starts as a basic combination slowly turns into something that looks and feels like a cheesecake.

At this point, the cheesecake already looks solid, but I decided to add one extra step. This isnโ€™t part of the original recipe โ€” just something I wanted to try.

Adding a Personal Twist

The final addition was melted Biscoff cookie butter drizzled over the top. Yes, this technically defeats the โ€œhealthyโ€ angle a bit, but the amount used is small, and curiosity won.

Once everything was layered and smoothed out, it was covered and placed in the refrigerator. The minimum rest time is about six hours, but this was left overnight for a full 24 hours.

The 24-Hour Test

After a full day in the fridge, the texture completely changed. The cookies softened all the way through, and the layers became clearly defined.

The first scoop says everything. The cookies cut easily, the yogurt holds its shape, and the whole thing looks way closer to cheesecake than expected.

Flavor-wise, it really does give the illusion of cheesecake. The softened cookies mimic a crust, similar to a graham cracker base, while the yogurt brings that creamy tang.

The cookie butter drizzle adds extra flavor, but honestly, it isnโ€™t required. Without it, the cheesecake still tastes great. With it, itโ€™s just a little more indulgent.

Equipment

  • Mixing Bowl
  • Spatula
  • Loaf Pan or Bowl
  • Refrigerator

Ingredients

  • 1 cup Greek yogurt vanilla flavor recommended
  • 6 pieces Biscoff cookies crushed or whole as preferred
  • 2 tbsp Biscoff cookie butter optional drizzle on top

Instructions

  • Step 1: Prepare Ingredients: Gather all ingredients. Use a vanilla-flavored Greek yogurt for the best taste. If you prefer a sweeter dessert, you can try vanilla-honey yogurt. Crush Biscoff cookies lightly if you want small crumbs throughout, or keep them whole for texture layers.
  • Step 2: Mix Yogurt and Cookies: In a mixing bowl, add Greek yogurt and Biscoff cookies. Use a spatula to gently fold the cookies into the yogurt. Make sure cookies are evenly distributed but donโ€™t overmix to keep chunks intact. This will create the ‘crust illusion’ inside the cheesecake.
  • Step 3: Optional Cookie Butter Layer: If using Biscoff cookie butter, melt it slightly in a microwave-safe dish for 10โ€“15 seconds. Drizzle a thin layer on top of the yogurt mixture to enhance flavor. Avoid using too much to keep it healthier. This step is optional but adds a creamy, rich taste.
  • Step 4: Transfer to Pan: Pour or spoon the yogurt and cookie mixture into a loaf pan or any airtight bowl. Spread evenly using a spatula. Press lightly to ensure cookies stay embedded but not crushed completely. Clean the edges for a neat presentation.
  • Step 5: Cover and Chill: Cover the pan with a lid or aluminum foil. Place in the refrigerator for at least 6 hours, but for best results, chill for 24 hours. This allows the cheesecake to set properly and the cookies to absorb moisture, giving a creamy yet slightly firm texture.
  • Step 6: Check Cheesecake Consistency: After chilling, remove from the fridge. Check texture by lightly pressing the top with a spoon. It should hold shape but remain creamy. If itโ€™s too soft, let it chill a few more hours.
  • Step 7: Serve: Slice using a clean knife or spoon. Serve chilled. You can drizzle extra Biscoff cookie butter on top before serving for added flavor. Each bite will give the illusion of a cheesecake crust thanks to the embedded cookies.
  • Step 8: Enjoy: Enjoy this creamy, quick, and slightly healthier alternative to traditional cheesecake. Perfect for a TikTok-inspired dessert, cheat day treat, or easy no-bake sweet snack.

This doesnโ€™t taste exactly like a traditional cheesecake โ€” and itโ€™s not trying to. But as an alternative, it absolutely works.

The layers, the texture, and the way the cookies absorb into the yogurt make this surprisingly satisfying. Itโ€™s simple, different, and honestly addictive.
